Marshmallow Brownies

Today I made Marshmallow Brownies!

1/3C butter, 2 oz unsweetened chocolate, 1C sugar, 2 eggs, 1C flour, 1/2t baking powder, 1/2t salt, 1t vanilla, 1C mini marshmallows

Preheat oven to 350F. Heat butter, chocolate and sugar, stirring until blended and melted. Cool 20 minutes. Add eggs. Blend well. In separate bowl, sift dry ingredients. Stir into wet until just blended. Add vanilla. Spread evenly onto a greased cookie sheet. Bake 15-20 minutes, or until toothpick inserted in center comes out almost free of crumbs. Press mini marshmallows lightly in a single layer onto top. Put sheet back in oven and bake 3-5 minutes longer, or until
marshmallows are lightly tanned. Cool 10 minutes. Remove from sheet. Cool completely before cutting.

Peanut Butter Marshmallow Fudge

Today I made Peanut Butter Marshmallow Fudge!

This recipe is from Barbara “Babs” Platts, mother of Congressman Todd Platts.

2C white granulated sugar, 1/2C milk, 1/4C butter, 9oz creamy peanut butter, 6 1/2oz marshmallow cream

[I used crunchy peanut butter instead of creamy.]

Heat sugar, milk and butter on medium until boiling, stirring constantly. Boil exactly five minutes without stirring. Remove from heat and let mixture stand exactly six minutes. Add peanut butter. Blend well. Add marshmallow cream. Blend well. Pour mixture into well-greased 9 X 13″ pan. Chill until firm. Cut into pieces.

Chocolate Marshmallow Cookies

Today I made Chocolate Marshmallow Cookies!

This recipe is from Mrs. Fields’ Cookie Book, page 75.

1C butter, 1C sugar, 1C brown sugar, 2 eggs, 1/2t salt, 3C flour, 2/3C cocoa, 1/2t baking soda, 2t vanilla extract, 2C mini chocolate chips, 8 oz mini marshmallows

Preheat oven to 400F. Keep the marshmallows frozen until you insert them in the dough. Mix flour, cocoa, salt and baking soda. Cream sugars with butter until fluffy. Add eggs. Blend well. Stir in vanilla. Add flour mixture. Blend well. Stir in chips.

Take a tablespoon of dough in hand, mash 4-5 marshmallows into it, and cover with more dough.

Place on ungreased baking sheets, 2″ apart. Bake 8-10 minutes. Cool 2 minutes, then transfer to racks to cool.

Chocolate Cereal Bars

Today I made Chocolate Cereal Bars!

Adapted from dozens of recipe websites.

10.5 oz mini marshmallows, 1/2C peanut butter, 1C chocolate chips or 1 1/4C chocolate chunks, 1/2C butter, 2-4C corn flakes, 1C peanuts

Melt first 4 ingredients together over low heat, stirring constantly. Remove from heat when smooth. Stir in peanuts. Add corn flakes pursuant to desired crunchiness. If you want fudgier bars, add 2C; if you want more cookie-like bars, add 4C. Press into greased 9″X13″ dish. Chill one hour before serving. Cut into bars.

Today I made Chocolate Cherry Cereal Bars!

1 1/2T butter, 2C mini marshmallows, 1/4C peanut butter, 3C puffed rice cereal, 2T butter, 1 1/2C sugar, 5oz evaporated milk, 1/4t salt, 2C mini marshmallows, 1C chocolate chips, 3/4C peanut butter, 1t vanilla, 1/2C halved cherries

Heat 1 1/2T butter on low until melted. Add 2C marshmallows and 1/4C peanut butter. Stir constantly until melted. Remove from heat. Add cereal. Blend well.

Spread mixture evenly into a 9″X13″ greased baking dish.

Heat remaining butter, sugar, evaporated milk and salt until boiling, stirring constantly. Boil 5 minutes while stirring. Remove from heat. Add remaining marshmallows, chocolate chips, remaining peanut butter and vanilla.

Stir quickly until well blended. Pour onto mixture in baking dish. Spread evenly.

Press halved cherries lightly into chocolate mixture. Let cool. Chill one hour or until set.

Chocolate Marshmallow Fudge

Today I made Chocolate Marshmallow Fudge!

2C chocolate chips, 6oz milk chocolate, 2oz unsweetened chocolate, 14oz sweetened condensed milk, 1C mini marshmallows

Melt chocolates, stirring constantly until smooth.

Remove from heat. Stir in milk, then marshmallows.

Spread evenly into foil-lined 8″ square pan. Cool 10 minutes. Cut into squares but do not remove from pan. Chill 1 hour.
