Gingerbread Biscotti

Today we made Gingerbread Biscotti!

3T butter, 1C brown sugar, 3 eggs, 3C flour, 1/4C molasses, 1T baking powder, 1 1/2T ground ginger, 1/2t cinnamon, 1/2t ground cloves, 1/4t ground nutmeg

Preheat oven to 350F.

Mix brown sugar and eggs.

Stir in molasses.

Mix in melted butter.

Blend well. In separate bowl, sift together dry ingredients. Add to wet until just blended.

Roll into 2 logs.

Bake 25 minutes or until firm and lightly browned. Slice into long sticks.

Reduce oven temperature to 325F. Bake 15 more minutes or until crisp.

Ginger Chocolate Molasses Cookies

Today I made Ginger Chocolate Molasses Cookies!

1/2C butter, 4oz unsweetened chocolate, 1C sugar, 1/4C molasses, 1 egg, 1/2C medium-fine chopped crystallized ginger, 2C flour, 1T ground ginger, 2t baking soda, 1t ground cinnamon, 1t allspice, 1/2t salt

Preheat oven to 350F.

Melt butter. Add chocolate. Stir until chocolate is melted. Add sugar. Stir in molasses. Add egg. Add crystallized ginger. In large bowl, sift together dry ingredients. Add to chocolate mixture. Blend well. Roll into balls, roll in sugar and place on parchment-paper-lined cookie sheets, 2″ apart. Bake 12-15 minutes, or until puffed and cracked on tops. Cool on cookie sheets.

Black Cake

Today we made Black Cake!

This recipe is from the book, “The Yankee Cook Book” by Imogene Wolcott, published in 1963.

We made half the recipe.

4C flour, 4t baking powder, 1t baking soda, 1/2t salt, 1t cream of tartar, 1t cloves, 1t nutmeg, 1C raisins, chopped, 1C butter, 1 1/2C sugar, 1/2C molasses, 1C milk, 3 eggs

Preheat oven to 350F.

Sift dry ingredients. Mix in 1/2C raisins.

Cream butter. Add sugar. Beat until fluffy. Add eggs. Blend well.

Add dry ingredients alternately with molasses and milk, beginning and ending with dry, beating until smooth after each addition.

Beat in remaining raisins. Turn into 2 greased square pans.

Molasses Cookie Bars

Today I made Molasses Cookie Bars!

This recipe is from the book, “Joy of Cooking” by Irma S. Rombauer and Marion Rombauer Becker, published in 1967.

1/3C powdered sugar, 6T butter, 1 egg, 1/3C molasses, 1/8t salt, 1/8t baking soda, 7/8C sifted flour, 1t vanilla extract, 1C coarsely chopped nuts, powdered sugar

Preheat oven to 375F. Sift powdered sugar. Beat in butter. Beat in egg and molasses. Sift flour. Remove 7/8C to a separate bowl. Sift in salt and baking soda. Add in 3 parts to butter mixture. Stir in vanilla. Blend well. Turn into 8″X8″ greased pan. Bake 15 minutes or until toothpick inserted in center comes out clean. While still warm, cut into bars. Sprinkle powdered sugar on top.
