Today we made Blueberry Oatmeal Choc Chip Muffins!

2C flour, 3t baking powder, 3T butter, melted, 1C chocolate chips, 3/4C sugar, 1T cinnamon, 1C quick oats, 2 eggs, 1/4C milk, 12 oz blueberry pie filling

Sift together dry ingredients except for oatmeal. Stir in oatmeal.

In separate bowl, beat eggs with pie filling.

Stir in melted butter.

Make a well in the dry ingredients. Add wet and stir a little.

Stir in milk until almost blended.

3t baking powder, 2C flour, 2 eggs, 21 oz cherry pie filling, 1C chocolate chips, 4T butter, melted; 1/4C skim milk

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, beat eggs with pie filling.

2C flour, 1/2C sugar, 3t baking powder, 1/2t salt, 2 eggs, 3/4C skim milk, 1/4C butter, melted; 1C halved, fresh, raw cranberries

Preheat oven to 400F. Sift dry ingredients including sugar. In separate bowl, stir eggs with milk.

2C flour, 2t baking powder, 3T sugar, 1 egg, 1/2C apple juice, 1/2C honey, 1/4C butter, melted; 2 medium Granny Smith apples, peeled and chopped into 1/2″ to 1/4″ pieces

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, mix wet ingredients, including apples. Blend well.

Dried Fruit Muffins

Today we made Dried Fruit Muffins!

2C flour, 3t baking powder, 1T cinnamon, 3T brown sugar, 1 egg, 1 1/4C milk, 1/4C butter, melted, 2 oz dried pineapple, 2 oz dried papaya, 4 oz dried cranberries, 2 oz walnuts

Preheat oven to 350F.

Chop walnuts medium fine, also. Combine with cranberries.

Squash Cinnamon Muffins

Today we made Squash Cinnamon Muffins!

2C baked, seeded, mashed butternut squash, 1/2 coarsely chopped walnuts, 1 3/4C flour, 1/2t cinnamon, 1/2t nutmeg, 2t baking powder, 1/2t salt, 2 eggs, 1/2C sugar, 1/4C butter, melted, 1/2C skim milk, 1/2t almond extract

Topping: 3T sugar, 1T cinnamon

Preheat oven to 375F.

Today I made Kiwi Muffins!

1/4C vegetable oil, 2C flour, 1 1/2t baking powder, 1/3C plus 1T sugar, 1 egg, 1C milk, 4 medium kiwis, chopped

Preheat oven to 350F. Beat egg.

In separate bowl, sift together dry ingredients. Make a “well” in the middle.

Bake 35 to 40 minutes or until toothpick inserted into the center of a muffin in the middle of the tin comes out nearly free of crumbs.

Today I made Sour Cream Cherry Muffins!

1 1/4C flour, 2 T sugar, 1t baking powder, 1/2t baking soda, 1/2t salt, 1 egg, slightly beaten, 1C sour cream, 2C coarsely fresh or frozen chopped cherries

Preheat oven to 350F.

Beat egg with sour cream. In separate bowl, sift together dry ingredients. Make a well and add wet. Stir just until blended. Fold in cherries. Turn into greased, lined or nonstick muffin tin. Bake 20-25 minutes or until toothpick inserted in center of center muffin comes out clean.

Today I made Ginger Muffins!

2C flour, 3t baking powder, 2T sugar, 1 egg, 1 1/4C milk, 1/4C butter, melted, 1/2C medium-finely chopped crystallized ginger, 1t ground ginger

Preheat oven to 350F. Combine butter, milk and egg. In separate bowl, sift together dry ingredients. Make a well in the dry ingredients and stir in the wet just until almost blended. Stir in chopped ginger until just blended. Turn into nonstick or greased or lined muffin tin. Bake 20-25 minutes or until lightly browned.

Tropical Fruit Muffins

Today I made Tropical Fruit Muffins!

8oz chopped, dried pineapple, 8oz chopped dates, 1 1/4C rum, 2 eggs, 5 large bananas, mashed, 1/2C butter, 2C flour, 3t baking powder, 2T sugar, 1/4C butter, melted

Preheat oven to 350. Soak chopped pineapple and dates in rum for 2 or more hours in a shallow, plastic-wrap covered glass container. Sift together dry ingredients except for sugar. Make a well in the dry and stir in bananas. Beat sugar with eggs. Melt butter. Add to egg mixture. Add to banana mixture. Drain dried fruit, reserving 1/4 cup rum.
Add both to batter. Stir until just blended. Turn into nonstick or greased or lined muffin tins. Bake 20-25 minutes or until lightly browned.
