Today we made Lemon Blueberry Muffins!

1 1/2C flour, 1/2 pint fresh blueberries, 1t baking powder, 1/2t baking soda, 1/4C sugar, 2T butter, melted, juice of 1 medium lemon, 5/8C skim milk

Preheat oven to 350F. Whisk egg in milk in glass measuring cup.

In large bowl, sift together dry ingredients. Make a well in the dry ingredients. Pour in milk mixture.

In separate glass measuring cup, mix sugar and lemon juice.

Add melted butter. Blend well.

Stir in lemon juice mixture.

Mash blueberries slightly with fork.

Ginger Choc Chip Muffins

Today we made Ginger Choc Chip Muffins!

2 1/2C flour, 3t baking powder, 2T ground ginger, 1C chocolate chips, 1/4C brown sugar, 1 1/4C skim milk, 1 egg, 4T butter, melted

Preheat oven to 350F. Sift dry ingredients. Stir in brown sugar. In a large glass measuring cup, beat together milk and egg.

Make a well in the dry ingredients and pour in 1/3 of the milk mixture while stirring.

3C flour, 3t baking powder, 2T sugar, 1 egg, 1 1/4C skim milk, 4T butter, melted, 2/3C firmly packed, coarsely chopped prunes, 1C chocolate chips

2C flour, 3t baking powder, 3T brown sugar, 1 egg, 1T ground ginger, 1 1/4C skim milk, 3T butter, melted, 1 large pear, peeled, cored and chopped into 1/2″ pieces, 1/2C chopped baby carrots in 1/2″ pieces, 1/2C chopped, dried, sugared dates

Sift together dry ingredients except for oatmeal. Stir in oatmeal.

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, mix wet ingredients, including apples. Blend well.

Today we made Dried Fruit Muffins!

2C flour, 3t baking powder, 1T cinnamon, 3T brown sugar, 1 egg, 1 1/4C milk, 1/4C butter, melted, 2 oz dried pineapple, 2 oz dried papaya, 4 oz dried cranberries, 2 oz walnuts

2C baked, seeded, mashed butternut squash, 1/2 coarsely chopped walnuts, 1 3/4C flour, 1/2t cinnamon, 1/2t nutmeg, 2t baking powder, 1/2t salt, 2 eggs, 1/2C sugar, 1/4C butter, melted, 1/2C skim milk, 1/2t almond extract

Topping: 3T sugar, 1T cinnamon

Preheat oven to 375F.
