Cornmeal Blueberry Muffins

Today I made Cornmeal Blueberry Muffins!

1/2C sugar, 1C fine cornmeal, 1/2t salt, 1 1/4C milk, 1 1/2C flour, 1T baking powder, 2 eggs, 1/2t baking soda, 1t cinnamon, 6T butter, melted, 1 pint fresh blueberries, well drained

Preheat oven to 350F.

Sift dry ingredients.

Spoon into nonstick, greased or lined muffin tin.

Bake 20-25 minutes or until lightly browned around edges.

Note: muffins will be mushy inside due to abundance of blueberries.

Banana Raisin Muffins

Today I made Banana Raisin Muffins

1/2C sugar, 1/3C butter, 2eggs, 1C mashed ripe bananas, 3/4C honey, 1/4C milk, 1 3/4C flour, 1t baking powder, 1t baking soda, 1C oatmeal, 1C raisins

Preheat oven to 375. Cream sugar with butter until fluffy. Add remaining wet ingredients. Blend well. In separate bowl, stir together dry ingredients. Blend well. Make a well in the dry ingredients and stir in wet until just blended. Stir in raisins. Spoon into greased muffin tins. Bake 20 minutes or until browned.

Surprise Muffins

Today we made Surprise Muffins!

1 1/2C honey, 1/2C oil, 4C flour, 2t baking powder, 2 eggs, 1/2C cornmeal, 1 1/2C milk or 1 1/2C juice(s), 1T orange zest (optional)

Possible Fillings: mini chocolate chips, butterscotch chips, fruit spread

Cinnamon Filling: 6oz coarsely chopped pecans, 1/4C sugar, 1/8C cinnamon

Preheat oven to 350F.

Surprise Muffins

Mix dry ingredients thoroughly. In separate bowl, mix wet ingredients thoroughly.

Make a well in the dry and mix in wet ingredients until just blended. Spoon 1t batter into each muffin tin cup. Mix filling(s). Spoon 2t filling onto batter in cups.

Spoon on remaining batter. Bake 20-25 minutes or until lightly browned.
