Today we made Pineapple Oat Cake!

1/2C butter, 1/2C brown sugar, 1 egg, 1/2t vanilla, 1 1/2C quick oats, 1/4t baking soda, 1 1/4C flour, 1/4t salt

Filling: 20 oz can pineapple chunks in 100% juice, well drained; 1C sugar; 1/4C cornstarch; 1/4C flour; 1/3C pineapple juice; 4 eggs

Crust: Preheat oven to 350F. Sift together flour, soda and salt. Stir in oats.

In separate bowl, cream butter with brown sugar.

Stir in egg.

Stir in flour mixture. Blend well.

Press into greased glass rectangular casserole dish. Bake until barely browned. Cool.

Filling: Beat eggs with sugar.

Blueberry Oatmeal Choc Chip Muffins

Today we made Blueberry Oatmeal Choc Chip Muffins!

2C flour, 3t baking powder, 3T butter, melted, 1C chocolate chips, 3/4C sugar, 1T cinnamon, 1C quick oats, 2 eggs, 1/4C milk, 12 oz blueberry pie filling

Sift together dry ingredients except for oatmeal. Stir in oatmeal.

Make a well in the dry ingredients. Add wet and stir a little.

Apple Nut Granola Bars

Today we made Apple Nut Granola Bars!

1 1/2C brown sugar, 1C flour, 1T cinnamon, 2 eggs, 5T butter, melted and cooled; 1C chocolate chips, 1C of coarsely chopped, walnuts / cashews / almonds / peanuts, 1C apple chopped into 1/4″ pieces, 2C quick oats, 1T almond extract

Preheat oven to 350F. Sift together flour and cinnamon. Stir in brown sugar and oats.

1/2C butter, 1/2C brown sugar, 1/4C honey, 2 eggs, 1/2t baking powder, 1 1/2C flour, 1t almond extract, 1C quick oats, 2 extra large Granny Smith apples, peeled and diced into 1/4″ pieces (about 2C)

Preheat oven to 350F.

Cranberry Oatmeal Scones

Today I made Cranberry Oatmeal Scones!

2 1/2C flour, 2C oatmeal, 1 1/4C sugar, 1t salt, 1t baking powder, 1/2t baking soda, 1 egg, 7T cold butter, 1/2C pineapple juice, 10 oz fresh raw cranberries, halved

Preheat oven to 400F. Mix dry ingredients.

Lemon Vodka Oat Bars

Today I made Lemon Vodka Oat Bars!

1 1/4 C flour, 1t baking powder, 1/2t salt, 1/2C butter, 1C sugar, 2 eggs, 2C oats

Filling: 1 1/2 C sugar, 1/4C cornstarch, 1/4C flour, 1/4C citrus vodka, juice of 2 lemons, 4 eggs

Preheat oven to 350F.

Today I made Cherry Crisp!

2C pitted halved fresh cherries, 2T cornstarch, 1/4C sugar, 1/4C water, 3/4C packed brown sugar, 1/2C uncooked quick-cooking or old-fashioned oats, 1/2C flour, 3T butter

Preheat oven to 350F.

Stir cornstarch, sugar, water and cherries constantly over medium heat until thickened, about 8 minutes. Remove from heat.

In bowl, stir together brown sugar, flour and oats.

Cut in butter. Spread half evenly into greased 8″ or 9″ square pan.

Sprinkle on remaining half of oats mixture, with extra brown sugar if desired.

Oatmeal Waffles

Today I made Oatmeal Waffles!

1 1/4C flour, 1t baking powder, 3/4t kosher salt, 1 egg, 1 1/2C milk, 3T butter, melted, 1/4C sugar, 1C quick or old-fashioned oats

Sift together flour, baking powder and sugar. Add salt and oats. In separate bowl, beat egg. Stir in milk. Stir in melted butter. Blend well. Make a well in the dry ingredients and stir in wet until just blended. Let sit five minutes. Turn into preheated waffle iron.

Apple Raisin Oat Bars

Today I made Apple Raisin Oat Bars!

1/2C butter, 1C brown sugar, 2 eggs, 1/2t vanilla, 3/4C quick oats, 1C flour, 1/2t baking soda, 1/2t cinnamon, 1/4t salt, 2 apples, peeled, cored and diced into 1/2″ pieces, 1C raisins

Preheat oven to 350F. Beat butter with brown sugar. Add eggs. Blend well. Add vanilla. Blend well. In separate bowl, sift together flour, soda, cinnamon and salt. Stir dry ingredients into wet. Stir in oats. Add apples. Blend well. Add raisins. Blend well. Turn into greased 9″ X 13″ rectangular pan. Bake 25-30 minutes or until lightly browned and bars come away from the edge of the pan. Cool before cutting.

Chocolate Peanut Butter Oatmeal Bars

Today I made Chocolate Peanut Butter Oatmeal Bars!

Crust: 1C butter, 1 1/3C firmly packed brown sugar, 3/4C light corn syrup,
5 1/3C quick oats, 2t vanilla extract

Topping: 1/4C unsweetened cocoa, 1/3C crunchy peanut butter, 14 oz fat-free sweetened condensed milk

The recipe for the crust is from the book “Growing Up on the Chocolate Diet” by Lora Brody, 1990. I halved the crust recipe.

Preheat oven to 350F. Cream butter and brown sugar. Mix in the next 3 ingredients. Spread in greased rectangular pan. Bake 16 minutes. Cool. Meanwhile, heat sweetened condensed milk with cocoa, stirring constantly until cocoa dissolves. Remove from heat. Stir in peanut butter. Blend well. Spread on top of cooled crust. Cool. Freeze 2 hours. Thaw 10 minutes. Cut into bars.
