Today we made Cherry Peach Ices!

12 oz fresh cherries, 1/2C sugar, 1C no-refined-sugar-added peach nectar, 1C water

Mix sugar and water over low heat until dissolved. Cool.

Pit cherries and puree in blender.

Mix in peach nectar.

Whisk in water mixture. Blend well.

Freeze until of desired consistency.

Peach Sorbet

Today we made Peach Sorbet!

1C water, 2T cornstarch, 2 small peaches, peeled, pitted and chopped finely, 1/2C sugar

Stir constantly, water and cornstarch over medium heat until thickened. Continue heating just until bubbly.

Remove from heat. Stir in sugar until dissolved.

Stir in peaches.

Freeze until of desired consistency.

Peach Souffle

Today we made Peach Souffle!

2 ripe or overripe medium peaches, peeled, pitted and coarsely chopped; butter, powdered sugar, 1/2C vodka, 1/3C sugar, 3 whites of large eggs

Add 6T sugar to vodka in a shallow glass dish or glass bowl and stir until dissolved.

Stir in peaches. Cover with plastic wrap and soak for at least 30 minutes.

Preheat oven to 350F.

Thoroughly butter a souffle dish. Generously dust with powdered sugar. Beat egg whites until soft peaks form.

Drain peaches. Gradually beat 1/3C sugar into whites until stiff peaks form.

Quickly fold in peaches.

Spoon into prepared dish.

Bake 25-30 minutes or until puffed and browned.

Peach Ice Cream

Today we made Peach Ice Cream!

1C sugar, 2 egg yolks, 1/2C lowfat milk, 1C heavy cream, 1 large fresh peach, 1t vanilla extract, 1 pinch salt

Please note: This recipe makes 1 pint. Double the amounts for 1 quart.

Heat yolks, sugar, milk and salt, stirring constantly until mixture is 200F. Do NOT boil.

Remove from heat and chill 2 or more hours. Puree peach in blender.

Peach Upside-Down Cake

Today I made Peach Upside-Down Cake!

I used too much butter (and arguably, too little rum).

7T butter, 1/4C brown sugar, 2T rum, 3T butter, 4 large, ripe fresh peaches, rinsed, peeled and sliced into thin crescents, 1 egg, 14 oz fat-free sweetened condensed milk, 1C flour, 1t cinnamon, 1t ground ginger, 1t ground nutmeg, 1/2t baking soda, 1/4t baking powder, 1/4t salt

Preheat oven to 350F. Beat 3T butter with brown sugar. Add rum. Light, not dark rum. Spread evenly on the inside of a greased 8″ springform pan whose outside bottom surface has been wrapped in foil to keep things neat. Arrange as many peach slices as will fit nicely on top of rum mixture in pan. Set aside. Cream 7T butter with sweetened condensed milk. Add egg. Blend well. Add vanilla. Blend well. In separate bowl, sift together dry ingredients. Add to wet. Blend well. Spread about half the batter onto the peaches in the pan. Arrange remaining peach slices on batter. Spread remaining batter evenly on top of peaches. Bake 35 minutes or until knife inserted in center of cake comes out clean. Do not underbake. Cool 20 minutes. Remove collar from pan. Invert. Remove pan bottom.

Peach Blueberry Thyme Cupcakes

Today I made Peach Blueberry Thyme Cupcakes!

1/2C butter, 1C sugar, 1 egg, 1 egg yolk, 1 1/3C flour, 1t baking powder, 1/8t salt, 1/2C milk, 1/2C roasted peach mush, 1/4C blueberries, 2t loosely packed fresh thyme leaves

Preheat oven to 350F.

Beat the butter. Add sugar.

Add egg and yolk. Add dry ingredients, along with milk. Fold in peach mush.

Fold in blueberries.

Fold in thyme.

Spoon into cupcake tin.

Bake 22-25 minutes or until toothpick comes out clean. Cool and eat.

Peach Cobbler

Today I made Peach Cobbler!

2 large fresh peaches, peeled and sliced, 1 1/2C brown sugar, 7T butter, melted, 1C flour, 2t baking powder, 1/4t salt, 1t cinnamon, 3/4C milk

Preheat oven to 350F.

Mix peach slices with one half the brown sugar. Set aside. Mix dry ingredients including remaining brown sugar.

Stir in milk until just combined. Pour butter into 8″ square baking dish. (I used a glass dish).

Spoon milk mixture over butter. Top with peaches.

Bake 50 minutes or until lightly browned. Do not overbake. Cool in dish.
