Today we made Peanut Butter Choc Chip Cupcakes With Yogurt Icing!
1C flour, 1/2t baking powder, 1/2t baking soda, 1/4t salt, 1C firmly packed brown sugar, 1/2C creamy peanut butter, 4T butter, 1/2C nonfat plain yogurt, 1C chocolate chips, 3 eggs
Icing: 3T plain nonfat yogurt, 3 to 3 1/2C powdered sugar
Preheat oven to 350F. Sift together flour, baking soda and salt. In separate bowl, cream butter with brown sugar.
Mix in peanut butter. Blend well.
Stir in eggs.
Alternately mix in dry ingredients with yogurt beginning and ending with dry until almost blended.
Stir in chocolate chips.
Turn into greased, lined or nonstick cupcake tin.
Bake 20-25 minutes or until lightly browned. Cool completely.
For icing, sift powdered sugar into yogurt and stir until barely spreadable.
Spread on cupcakes.
Today we made Pear Peanut Butter Cookie Bars!
2 1/2C flour, 2t baking powder, 1/2t salt, 1/2c creamy peanut butter, 1C chocolate chips, 1/4C honey, 2 large pears, peeled, cored and chopped into 1/2″ pieces, 1T cinnamon, 1/2C plain nonfat yogurt
Preheat oven to 350F. Sift flour, baking powder, salt, and cinnamon. In separate bowl, beat yogurt, honey and eggs.
In separate bowl, beat peanut butter and brown sugar.
Add egg mixture to it.
Make a well in the dry ingredients. Stir in wet until almost blended.
Stir in chocolate chips and pears.
Spread evenly into greased 9″X13″ pan.
Bake 25-30 minutes or until lightly browned.
Today we made Multi-Flavor Candy Bars!
Crust: 2/3C brown sugar, 1C butter, 2 1/2C flour
Filling: 14 oz sweetened condensed milk, 1C creamy peanut butter, 2C chocolate chips, 1 egg, 3C mini marshmallows
Preheat oven to 325. Blend together crust ingredients.
Press into large greased casserole dish.
Bake 20 minutes or until light golden on the edges. Increase oven temperature to 350F. Mix sweetened condensed milk, peanut butter and egg. Blend well.
Spread evenly onto crust.
Sprinkle on chocolate chips.
Sprinkle on mini marshmallows.
Bake 10 minutes. Cool.
Chill before cutting.
Today we made PB Chocolate Chip Cookies!
4 1/2C flour, 2T baking soda, 1t salt, 1 1/2C brown sugar, 1 1/2C sugar, 5 large eggs, 1T almond extract, 3C chocolate chips, 1C creamy peanut butter
Preheat oven to 350F.
Sift together dry ingredients. In separate bowl, cream peanut butter and sugars until smooth.
Add eggs (5, total). Blend well.
Stir in almond extract.
Stir in dry ingredients. Blend well.
Mix in chocolate chips.
Roll into balls and place on foil-lined cookie sheets.
Bake 15-20 minutes or until lightly browned. Makes 4 dozen.
Today we made Peanut Butter Gelato!
1/2C peanut butter, 2C skim milk, 14 oz sweetened condensed milk, 4T cornstarch
Mix cornstarch and milks.
Cook over medium heat, stirring constantly until bubbling and the consistency of pudding. Stir in peanut butter.
Blend well. Cool. Freeze.
Today we made Peanut Butter Nut Pie!
1 graham cracker pie shell, 3/4C light corn syrup, 1/2C creamy peanut butter, 3 eggs, 2/3C brown sugar, 1/2C chopped almonds, 3/4C peanuts, 1t vanilla
Preheat oven to 325F. Mix together corn syrup, peanut butter and eggs until smooth.
Stir in brown sugar and vanilla.
Blend well. Stir in almonds and peanuts.
Pour into pie shell.
Bake 45-50 minutes or until almost set in the middle. Cool before cutting.
Today we made Peanut Butter Marshmallow Pudding!
scant 1/4C cornstarch, 1/3C creamy peanut butter, 1/4C sugar, 1C skim milk, 1 heaping C mini marshmallows
Stir together cornstarch, milk and sugar.
Cook on medium heat, stirring constantly until thickened, 5-7 minutes. Stir in marshmallows to melt. Blend well.
Stir in peanut butter.
Serve warm topped with chocolate syrup.
Today we made Chocolate Peanut Butter Cookies!
1/4C flour, 1/3C unsweetened cocoa powder, 1/2t salt, 1/4t baking powder, 12 oz chocolate chips, 1/3C creamy peanut butter, 1/2C sugar, 1t vanilla extract, 2 eggs
Sift together dry ingredients. In large saucepan, melt ONLY 6 ounces (1C) of the chocolate chips, and peanut butter. Stir until smooth.
Stir in sugar. Cool 20 minutes.
Preheat oven to 350F.
Stir 2 eggs into chocolate mixture.
Mix in vanilla. Blend well.
Add dry ingredients. Stir until just blended.
Stir in remaining chips.
Drop by T onto foil-lined cookie sheets.
Bake 12-15 minutes or until slightly cracked on top, and the cookie edges are coming slightly away from the foil. Do not overbake.
Today I made Apple Peanut Butter Cake!
2C flour, 2C sugar, 1C creamy peanut butter, 1/4C butter, 1/2C milk, 2 eggs, 1t vanilla extract, 1t baking soda, 1t baking powder, 3 medium Granny Smith apples, peeled
Preheat oven to 325F. Sift together dry ingredients except sugar. In separate bowl, cream butter, peanut butter and sugar together.
Mix in milk. Blend well.
Stir in vanilla.
Mix in dry ingredients.
Chop 1 apple into 1/2″ pieces. Mix into batter.
Turn into greased 10″ round cake pan.
Top with crescent-shaped apple slices, one layer deep, of the remaining apples.
Place a baking sheet under cake pan while baking, in case of batter overflow. Bake 1 hour or until well browned and knife inserted in center of cake emerges clean.
Today I made Peanut Butter Waffles!
1 3/4C flour, 1/3C brown sugar, 1 3/4t baking powder, 1/2t salt, 1/3C peanut butter, 4 eggs, 2C skim milk, 1T butter, melted
Sift together dry ingredients, including brown sugar.
In separate bowl, beat eggs.
Mix in milk.
Add melted butter.
Stir in peanut butter.
Make a well in dry ingredients. Mix in wet until just blended.
Turn into preheated waffle iron. The heat radiates from the center of the iron, so add the batter on the edges first.
