Coconut Lime Pie

Today I made Coconut Lime Pie!

1 pie crust, 4 eggs, 1C sugar, 1/3C flour, 1/2C plus 2T fresh lime juice (from about 5 limes), 1/3C shredded coconut, 1T vanilla extract

Preheat oven to 325F. Bake pie crust 20 minutes. Cool.

Preheat oven to 300F.

Whisk together eggs and sugar.

Stir in remaining ingredients. Pour filling into pie crust. Bake in middle of oven 20-30 minutes or until center is set. Cool in pan on rack. Chill 1 hour.

Pineapple Cheese Pie

Today I made Jim’s Pineapple Cheese Pie!

20 oz crushed pineapple, 2 regular containers Cool Whip, 1 large box pineapple Jell-o, 8oz cream cheese, 9″ baked pie crust

Drain juice from pineapple; set aside. Heat jello in juice until dissolved. Let cool.

Mix fruit with the cheese and one half the Cool Whip. Blend well.

Pour into crust and chill 4-5 hours.

The batter fills a pie crust plus two dessert glasses. Top with remaining Cool Whip.
