Pear Scones

Today we made Pear Scones!

2C flour, 6T brown sugar, 1T cinnamon, 2 medium Anjou pears, peeled, cored and coarsely chopped; 1T baking powder, 4T butter

Preheat oven to 350F. Sift together flour, baking powder and cinnamon. Mix in 3T brown sugar. In separate bowl, add juice and 3T brown sugar to chopped pears.

Blend well. Cut butter into flour mixture until butter is blended in. It should still be powdery. Stir pear mixture into dry ingredients until just blended.

Drop by T onto greased cookie sheets.

Bake 15-18 minutes or until lightly browned.

Squash Scones

Today we made Squash Scones!

3/4C milk, 1 2/3C flour, 1/4t salt, 1/2C sugar, 1/2t baking powder, 1T cinnamon, 4T butter, 1C mashed, steamed butternut squash

Preheat oven to 375F. Stir together dry ingredients.

Cut in butter. Mixture should still be somewhat powdery. Stir in milk until almost blended.

Stir in squash until just blended.

Spoon by T onto greased cookie sheets.

Bake 15-20 minutes or until browned on the bottom.

Cream Cheese Scones

Today we made Cream Cheese Scones!

2C flour, 1T baking powder, 8 oz fat-free cream cheese, 1 egg, 1/3C fruit juice – like peach, apricot or mango, 3T sugar

Preheat oven to 350F. Mix cream cheese with sugar.

Stir in juice.

Beat in egg. In separate bowl, sift flour and baking powder. Make a well in this mixture.

Stir in wet ingredients until a sticky dough forms. Drop by T onto greased cookie sheets.

Bake 8-10 minutes or until lightly browned.

Apple Peanut Scones

Today we made Apple Peanut Scones!

2C flour, 1/2C coarsely chopped salted roasted peanuts, 1/4C creamy peanut butter, 3T brown sugar, 2 medium Granny Smith apples, peeled and chopped into 1/2″ to 1/4″ pieces, 1/2C skim milk, 3T sugar, 1T baking powder, 1T butter

Preheat oven to 350F. Sift together flour, baking powder and sugar. In separate bowl, mix chopped apples with peanut butter, brown sugar and chopped peanuts.

Beet Chip Scones

Today we made Beet Chip Scones!

3 3/4C flour, 1t salt, 1/4 sugar, 3T baking powder, 1/2C cold butter, 1 1/2C milk, 12 oz chocolate chips, 4 medium beets

Preheat oven to 375F.

Dice beets into 3/4″ pieces and steam in spring water.

Mix together dry ingredients. Cut in butter.

Add milk and blend until almost combined.

Fold in beets and chips. Don’t overmix.

Today I made Mini-Chip Scones!

3C flour, 1C sugar, 4t baking powder, 1/2t salt, 1/2C cold butter, 1C mini chocolate chips, 4T pineapple or orange juice, 1C milk

Preheat oven to 350F.

Mix dry ingredients including sugar. Cut in butter with fork.

Today I made Cranberry Oatmeal Scones!

2 1/2C flour, 2C oatmeal, 1 1/4C sugar, 1t salt, 1t baking powder, 1/2t baking soda, 1 egg, 7T cold butter, 1/2C pineapple juice, 10 oz fresh raw cranberries, halved

Preheat oven to 400F. Mix dry ingredients.

Today I made Lemon Raisin Scones!

3C flour, 1C sugar, 4t baking powder, 1/2t salt, 1/2C very cold butter, 1C raisins, juice of 1 lemon, 2t lemon extract, 1C milk

Preheat oven to 375F.

Strawberry Mint Scones

Today I made Strawberry Mint Scones!

3C flour, 1C sugar, 4t baking powder, 1t salt, 8oz cold reduced-fat cream cheese, 2t mint extract, 1C skim milk, 1 pint strawberries, hulled and chopped into 1/4″ pieces

Preheat oven to 350F.

Sift dry ingredients. Stir in sugar. Cut in cream cheese with fork. Do not overwork.

In separate bowl, mix chopped strawberries with extract and milk. Blend well.

Today I made Apple Chocolate Chip Scones!

3/4C milk, 3/4C chocolate chips, 1 2/3C flour, 1/4t salt, 1/4C sugar, 1 1/2t baking powder, 1/2t ground cinnamon, 4T butter, 2 small apples, peeled, cored and chopped medium-fine

Preheat oven to 375F.
