Squash Scones

Today we made Squash Scones!

3/4C milk, 1 2/3C flour, 1/4t salt, 1/2C sugar, 1/2t baking powder, 1T cinnamon, 4T butter, 1C mashed, steamed butternut squash

Preheat oven to 375F. Stir together dry ingredients.

Cut in butter. Mixture should still be somewhat powdery. Stir in milk until almost blended.

Stir in squash until just blended.

Spoon by T onto greased cookie sheets.

Bake 15-20 minutes or until browned on the bottom.

Squash Ice Milk

Today we made Squash Ice Milk!

1C mashed, steamed butternut squash, 14 oz sweetened condensed milk, 1T cinnamon, 1/4C brown sugar, 1C skim milk

Beat all ingredients until well blended.

Freeze until of desired consistency. Serve with chocolate syrup or other toppings.

Squash Ginger Pie

Today we made Squash Ginger Pie!

1/3C sugar, 1/2C light brown sugar, 1/2C flour, 2T ground ginger, 2C steamed spaghetti squash, mashed, 2 eggs, 2C skim milk, 1 graham cracker pie shell

Preheat oven to 400F. Mix sugars, flour and ginger.

Stir in slightly beaten eggs, and milk, gradually.

Today we made Squash Custard Pie!

2 eggs, 14 oz sweetened condensed milk, 1 1/2C steamed, mashed acorn squash, 1T cinnamon, 3T flour, 1/4C skim milk, 1 graham cracker pie shell

Squash Almond Bread

Today we made Squash Almond Bread!

1C baked, mashed acorn squash, 1 3/4C flour, 1C brown sugar, 1t baking soda, 1T cinnamon, 1 egg, 1/2C butter, melted; 1/2C coarsely chopped, smoked whole almonds, 1T almond extract

Preheat oven to 325F. Mix butter and brown sugar.

Today we made Squash Biscotti!

4T butter, 3/4C brown sugar, 2 eggs, 1C baked, seeded and mashed acorn squash, 2 1/2C flour, 1t baking powder, 1T cinnamon, 1T almond extract

Preheat oven to 350F.

In separate bowl, sift together dry ingredients. Make a well in the dry ingredients. Stir in the wet until just blended.

Shape dough into a log about 6″ long.

Bake 30 minutes on greased cookie sheet. Reduce oven to 325F. Slice loaf into long, thin strips.

Bake an additional 40-50 minutes or until dry and crunchy.

Squash Cinnamon Muffins

Today we made Squash Cinnamon Muffins!

2C baked, seeded, mashed butternut squash, 1/2 coarsely chopped walnuts, 1 3/4C flour, 1/2t cinnamon, 1/2t nutmeg, 2t baking powder, 1/2t salt, 2 eggs, 1/2C sugar, 1/4C butter, melted, 1/2C skim milk, 1/2t almond extract

Topping: 3T sugar, 1T cinnamon

Preheat oven to 375F.

Stuffed Acorn Squash

Today I made Stuffed Acorn Squash!

1 large acorn squash, halved and seeded, 1C water, 3T butter, melted, 1T lemon juice, 1T cinnamon, 2T brown sugar, 1 large apple, peeled, cored and chopped, 1/2C chopped walnuts

Preheat oven to 350F.

Place squash cut side down in large dish. Pour water around squash.

Bake 20 minutes. Remove from oven. In bowl, mix all other ingredients.

Today I made Squash Loaf Cake!

2C flour, 3/4t baking soda, 1/2t baking powder, 1/2t salt, 1C baked, mashed butternut squash, 2T butter, melted, 1/4C reduced fat sour cream, 2 eggs, 1C brown sugar, 1T cinnamon

Topping: 1 1/2t cinnamon, 2T brown sugar, 1T butter, melted

Preheat oven to 350F.
