Today we made Brown Sugar Loaf with Strawberry Icing!

1C milk, 1C brown sugar, 4T butter, 3C flour, 1T cinnamon, 2t baking powder, 2 eggs, 1T almond extract

Icing: 4 1/4C powdered sugar, 16 oz fresh strawberries, rinsed, hulled and sliced

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, cream butter with brown sugar.

Stir in eggs.

Mix in extract. Blend well.

Add dry ingredients to wet alternately with milk, until just blended, beginning and ending with dry.

Turn into greased 11″X 13″ pan.

Bake 40 minutes or until lightly browned. Cool completely. For icing, push strawberries through fine mesh sieve.

Sift powdered sugar into puree. Stir until barely pourable.

Cut cake in half horizontally with serrated knife. Spread 2/3 of icing on one half, cut side up.

Strawberry Wine Sorbet

Today we made Strawberry Wine Sorbet!

16 oz fresh strawberries, 1C sugar, 3/4C sweet red wine, 1/4C water

Mix sugar, water and wine over low heat for 10 minutes, stirring occasionally or until sugar is dissolved. Cool.

Hull, and puree strawberries in blender.

Run through a fine-mesh sieve. Discard seeds or use for another recipe.

Strawberry Meringue Cookies

Today we made Strawberry Meringue Cookies!

4 egg whites, 5 large strawberries, hulled, 1 1/2C powdered sugar

Preheat oven to 250F. Beat whites until soft peaks form.

Gradually beat in sugar until glossy peaks form, about 7-10 minutes.

In blender, chop strawberries into 1/4″ pieces. Push chopped strawberries through fine mesh sieve. Fold strawberry liquid into meringue.

Then fold in the strawberry flesh.

Drop by T onto foil lined cookie sheets.

Bake 1/2 hour. Turn off oven. Let cookies sit in oven 2 1/2 – 3 hours more until dry and crisp.

Drunken Strawberry Almond Ice Milk

Today we made Drunken Strawberry Almond Ice Milk!

1 pint strawberries, coarsely chopped into 1/2″ pieces; 1C dry gin, 1T almond extract, 2T sugar, 14 oz sweetened, condensed milk; 1C skim milk, 4 oz almonds, coarsely chopped

In medium bowl, stir together gin, almond extract and sugar.

Cover bowl with plastic wrap and chill 2 or more hours. Mix together milks.

Lowfat Strawberry Marshmallow Coconut Ice Cream

Today we made Strawberry Marshmallow Coconut Ice Cream!

1 pint strawberries, chopped into 1/2″ pieces; 2C mini marshmallows, 1C half and half, 1/2C sugar, 1/2C skim milk, 1C shredded coconut

Melt marshmallows with half and half and skim milk over low heat, stirring constantly until smooth. Remove from heat.

Stir in sugar.

Today we made Strawberry Cupcakes!

2T butter, 1/2C sugar, 6 oz reduced-fat cream cheese, 1t vanilla, 2 eggs, 1C flour, 1t baking powder, 6T strawberry puree

Frosting: 1T strawberry puree, 1 1/2 to 2C powdered sugar, 2 oz reduced-fat cream cheese

Preheat oven to 350.

To make fresh strawberry puree, push fresh, hulled strawberries through fine-mesh sieve, reserving 1T for frosting. Mix in dry ingredients alternately with strawberry puree beginning and ending with dry, just until blended.

Stir in vanilla.

Turn into cupcake tin.

Bake 25 to 30 minutes or until toothpick inserted in center of center cupcake emerges clean. Cool before spreading on frosting.

Today we made Strawberry Souffle!

1 pint fresh strawberries, hulled and sliced, butter, powdered sugar, 5T sugar, 1/3C any sweet red wine, 1/3C sugar, 5 whites of large eggs

Add wine and 5T sugar to strawberries in a shallow dish. Stir to combine. Cover with plastic wrap and soak for at least 30 minutes.

Thoroughly butter a souffle dish. Generously dust with powdered sugar. Beat egg whites until soft peaks form.

Today we made Chocolate Strawberry Cookie Bars!

2 1/4C flour, 1t baking powder, 6T butter, 1/2C powdered sugar, 2C chocolate chips. 6T strawberry puree, 5T flour, 1t baking powder, 3T powdered sugar

Preheat oven to 350F.
