Today we made Strawberry Souffle!

1 pint fresh strawberries, hulled and sliced, butter, powdered sugar, 5T sugar, 1/3C any sweet red wine, 1/3C sugar, 5 whites of large eggs

Add wine and 5T sugar to strawberries in a shallow dish. Stir to combine. Cover with plastic wrap and soak for at least 30 minutes.

Preheat oven to 350F.

Thoroughly butter a souffle dish. Generously dust with powdered sugar. Beat egg whites until soft peaks form.

Drain strawberries. Gradually beat 1/3C sugar into whites until stiff peaks form.

Quickly fold in strawberries.

Spoon into prepared dish.

Bake 18-22 minutes or until puffed and browned.

Chocolate Strawberry Bars

Today we made Chocolate Strawberry Cookie Bars!

2 1/4C flour, 1t baking powder, 6T butter, 1/2C powdered sugar, 2C chocolate chips. 6T strawberry puree, 5T flour, 1t baking powder, 3T powdered sugar

Preheat oven to 350F.

Mix first 2 ingredients with butter.

Add powdered sugar.

Press into bottom of greased rectangular baking pan.

Bake 10 minutes. Spread chocolate chips over crust.

As soon as melted, spread evenly.

Stir together puree and remaining ingredients– which have been sifted.

Bake 25 minutes or until just set in center. Cool before cutting.

Strawberry Milk Bread

Today we made Strawberry Milk Bread!

1 1/4C skim milk, 4T butter, 2T sugar, 4-5C flour, 2t salt, 2 envelopes (4 1/2t) yeast, 1/4C water, 1/2C strawberry fruit spread, 3/4C powdered sugar.

In large bowl, pour warm water (105 to 115 degrees Fahrenheit) on yeast. Stir until yeast is dissolved.

Add 1/2C flour.

Heat butter with milk, salt and sugar. Stir until butter is melted. Blend well. Cool 10 minutes.

Stir into yeast mixture.

Add enough flour to form a dough. Knead 5 minutes.

Place in greased bowl.

Turn over once. Cover with plastic wrap. Refrigerate overnight. Let stand until room temperature. Punch down dough. Place on floured surface. Knead a couple of minutes. Divide dough in two. Take one half and roll or stretch out into a rectangle. Add more flour if very sticky.

Smear strawberry fruit spread on top, leaving an inch margin on all sides.

Sprinkle on powdered sugar.

Roll into a log and place in a greased loaf pan. Seal the edge. Repeat with the other half of the dough. Cover with plastic wrap and let rise 1 hour.

Preheat oven to 350F. Bake 35-40 minutes or until lightly browned.

Please Note: There might be liquid in the loaf pan after baking. It will get absorbed in the bread as it cools. This is a crusty, flaky bread. For a chewier bread, work 2 eggs into dough after milk mixture and flour have been added to yeast mixture.

Today I made Strawberry Mint Scones!

3C flour, 1C sugar, 4t baking powder, 1t salt, 8oz cold reduced-fat cream cheese, 2t mint extract, 1C skim milk, 1 pint strawberries, hulled and chopped into 1/4″ pieces

Preheat oven to 350F.

Sift dry ingredients. Stir in sugar. Cut in cream cheese with fork. Do not overwork.

In separate bowl, mix chopped strawberries with extract and milk. Blend well.

Make a “well” in the dry mixture.

Pour in wet.

Stir just until combined. Turn into non-stick or lined muffin tins.

Bake 30-35 minutes or until golden.

Strawberry Chocolate Ice Milk

Today I made Strawberry Chocolate Ice Milk!

2 pints strawberries, rinsed and hulled, 1 1/2C skim milk, 14 oz fat-free sweetened condensed milk, 1 1/2C bittersweet chocolate chips

Sieve strawberries. Save liquid; use pulp for another recipe. Stir in sweetened condensed milk.

Add chocolate chips. If you don’t want them to sink to the bottom, use mini-chips.

Strawberry Banana Grapefruit Sorbet

Today I made Strawberry Banana Grapefruit Sorbet!

1 pint fresh strawberries, chopped, 1 banana, 1/2C sugar, 4T grapefruit juice

Put strawberries through sieve. Retain the juice and discard the pulp. Work banana into juice until of desired consistency. Stir in grapefruit juice. Stir in sugar. Blend well. Chill at least one hour. Turn into ice cream maker and process according to manufacturer’s directions.
