Whole Wheat Chocolate Cashew Cake

Today I made Whole Wheat Chocolate Cashew Cake!

4 eggs, 4T brown sugar, 3 oz chocolate chips, melted and slightly cooled, 3/4C whole wheat flour, 1/4C cocoa power, 1/4t baking powder, 3T vegetable oil, 2C cashews

Preheat oven to 350F. Beat together brown sugar and eggs. Blend well. Stir in oil. Blend well. In separate bowl, sift together dry ingredients. Stir into wet. Melt chocolate. Stir chocolate into cocoa mixture. Blend well. Fold in cashews. Spoon into 9″X13″ greased baking dish. Spread evenly. Bake 20-25 minutes or until toothpick comes out clean.

Whole Wheat Blueberry Yogurt Bread

Today I made Whole Wheat Blueberry Yogurt Bread!

1/2 oz active dry yeast, 1t sugar, 3/4C sugar, 1/3C water, 1C nonfat plain yogurt, 2C fresh blueberries, 3T butter, melted, 2t salt, 4C whole wheat flour

Please Note: This is a yeast recipe that requires two (2) “proofs” (risings).

Heat water to between 105 degrees F and 115 degrees F. If you don’t have a thermometer, test the water on the inside of your wrist. The water should be barely tolerable. If the water burns your wrist, it’s too hot. Better to have cooler than hotter water. If the water is too hot, it will kill the yeast. Pour water onto the yeast in a large bowl. Stir in 1t sugar. Let stand 10 minutes. Add remaining sugar. Stir in yogurt and 1 CUP blueberries.

Blend well. Stir in melted butter. Blend well. Stir in salt and flour.

Blend well to form a stiff batter. Gently fold in remaining blueberries.

Cover bowl with kitchen towel or plastic wrap and let rise for 1 1/2 hours in slightly warm place. Turn into greased loaf pans. Let rise another hour.

Preheat oven to 375F.

Bake 35-40 minutes or until loaves sound hollow when tapped.
Cool 10 minutes. Remove from pans.

Whole Wheat Chocolate Chocolate Chip Cake

Today I made Whole Wheat Chocolate Chip Cake!

1 1/2C sugar, 3/4C whole wheat flour, 1t salt, 1C water, 2 eggs, beaten, 1/2C butter, 1/4C cocoa, 1t vanilla extract, 1C flour, 2t baking soda, 1C butter, 1/2C sour cream, 1C chocolate chips

Preheat oven to 375F. Sift together sugar, the two flours, salt and baking soda. In saucepan, melt butter in cocoa and water, stirring until mixture boils. Remove from heat. Pour into dry ingredients. Blend well. Stir sour cream with beaten eggs. Add to chocolate mixture. Blend well. Stir in chocolate chips. Pour batter into 13″X9″ baking dish. Bake 30 minutes or until toothpick comes out clean. Cool in pan on rack.

Wheat Chip Spice Cookies

Today I made Wheat Chip Spice Cookies!

1/4C plus 2T butter, 3/4C sugar, 1 egg, 3/4t vanilla, 2T milk,
1 1/2C whole wheat flour, 3/4t baking powder, 1/2t baking soda,
1/2t salt, 1/8t ground nutmeg, 1/2t ground cinnamon, 1C chocolate chips

Preheat oven to 350F. With electric mixer, beat butter and sugar until light and fluffy. Add egg, vanilla and milk. Mix until well blended. In separate bowl, combine dry ingredients. Gradually beat into wet ingredients, scraping the sides of the bowl. Blend welll. Stir in chocolate chips. Drop by rounded tsps onto greased cookie sheets. Bake 10-12 minutes or until lightly browned. Cool 5 minutes. Transfer to rack to cool completely.

Apple Pecan Coffeecake

Today we made Apple Pecan Coffeecake!

Cake: 2/3C flour, 1/2C whole wheat flour, 1t baking soda, 1t cinnamon, 1/4t salt, 1 1/2C peeled, cored and diced apple, 1 egg, 3/4C sugar, 1/4C chopped pecans, 1/4C applesauce

Topping: 1T flour, 1T whole wheat flour, 1/2t cinnamon, 1T butter, 1/4C chopped pecans, 1/4C brown sugar

Preheat oven to 350F.

Mix the first five ingredients.

In separate bowl, mix apple and egg.

Stir in 3/4C sugar and applesauce. Add pecans. Add flour mixture and stir until just combined. Spoon into greased tube pan.

Stir together flours, brown sugar and cinnamon. Cut in butter until crumbly. Mix in pecans. Sprinkle over batter in pan. Bake 30-35 minutes or until toothpick comes out clean. Cool in pan 10 minutes. Remove from pan and serve warm.

Whole Wheat Sponge Cake

Today I made Whole Wheat Sponge Cake With Chocolate Frosting!

6 eggs, separated, 1 1/4C brown sugar, 1/2C water, 1/2t vanilla or vanilla powder, 1/2t lemon extract, 1/4t orange flower water, 1 1/2C whole wheat flour, sifted, 1/2t salt, 1t cream of tartar

Prehat oven to 350F.

Beat with electric mixer yolks, sugar, water and flavorings about 7 minutes, until very thick and creamy. Sift in flour and salt gradually, folding in. In separate bowl, beat egg whites until stiff but not dry. Fold into yolk mixture. Bake in ungreased tube pan 60-70 minutes or until lightly browned. Invert the pan to cool completely.

Chocolate Frosting
1/2C chocolate chips, 1/4C water, 1 3/4 to 2C powdered sugar

Melt chips. Stir in water. Stir in sugar until desired consistency. Spread on cake.
