Today we made Choc Choc Chip Yogurt Cupcakes!

6T butter, 1 2/3C flour, 1/2C unsweetened cocoa powder, 1T baking powder, 1/2t salt, 1/2C firmly packed brown sugar, 2C chocolate chips, 2 eggs, 1C plain nonfat yogurt

Icing: 1/4C unsweetened cocoa powder, 2 1/4C powdered sugar, 4T plain nonfat yogurt

Preheat oven to 350F. Melt butter with 1 CUP chocolate chips.

Stir in brown sugar. Cool 20 minutes.

Sift together cocoa, flour, baking powder and salt.

Stir eggs into melted chocolate mixture. Blend well.

Alternately add dry ingredients and yogurt, beginning and ending with dry until just blended.

Stir in remaining 1 CUP chocolate chips.

Turn into lined, greased or nonstick cupcake tin, overfilling each cup.

Bake 25-30 minutes or until set in center. Cool completely. For icing, sift together cocoa and sugar. Mix in yogurt until barely spreadable.

Mango Frozen Yogurt

Today we made Mango Frozen Yogurt!

1 medium mango, pureed, 16 oz nonfat plain yogurt, 1/2C sugar

Make yogurt cheese: Put yogurt in fine-mesh sieve over bowl covered with plastic wrap. Chill overnight. Stir together yogurt and puree with rubber spatula.

Stir in sugar.

Blend well with whisk.

Caramel Frozen Yogurt

Today we made Caramel Frozen Yogurt!

16 oz nonfat plain yogurt, 14 oz sweetened condensed milk

Drain yogurt overnight in a fine mesh sieve suspended over a bowl, covered in plastic wrap. In the morning, discard liquid.

In small saucepan, cook sweetened condensed milk over medium heat until golden, stirring constantly.

Whisk into drained yogurt. Blend well.

Banana Frozen Yogurt

Today I made Banana Frozen Yogurt!

4 small bananas, mashed, 2C nonfat plain yogurt, 1C sugar

Make yogurt cheese:

Place cheesecloth in large bowl. Place yogurt on cheesecloth. Cover bowl with plastic wrap. Chill overnight. Squeeze as much water as possible from yogurt.

Or place yogurt in sieve suspended over a bowl. Cover with plastic wrap. Chill overnight.

Cranberry Yogurt Cake

Today I made Cranberry Yogurt Cake!

2 eggs, 1C sugar, 1C nonfat plain yogurt, 1t vanilla extract, 2C flour, 1t baking soda, 1t baking powder, 1/2t salt, 12 oz fresh whole cranberries, 3/4C sugar, 1/2C water

Preheat oven to 350F.

Cook cranberries in 1/2C water and 3/4C sugar until liquid is boiling. Remove from heat and cool.

Cream butter and 1C sugar.

Turn half of batter into greased tube pan.

Drain cranberries. Spoon half on top of batter in pan.

Turn remaining batter onto cranberries in pan. Top with remaining cranberries. Bake 50 minutes or until toothpick inserted in center of cake comes out clean. Cool. Remove from pan. Eat.

Blueberry Frozen Yogurt

Today I made Bluebery Frozen Yogurt!

2C fresh blueberries, 1 quart nonfat plain yogurt, 1/4C to 1/2C sugar (to taste), 1C light rum

Soak blueberries in rum overnight. Make yogurt cheese: place cheesecloth in large bowl. Place yogurt on cheesecloth. Cover bowl with plastic wrap. Chill overnight. Squeeze as much water as possible from yogurt.

Push half the blueberries through a sieve into yogurt cheese.
